Sweet Lassi Recipe

This is a very typical drink from Punjab, drunk often in summer. It's served cold or with ice cubes and the sweetness with yoghurt making it's really energy giving and refreshing. It's also served as a side drink with hot curries because of the cooling effect on the palette.

Ingredients:

500gms: natural set- yoghurt

6 teaspoon: sugar

Water: 125 gms (depending on the consistency you prefer)

Green cardamom powder: 1/2 tsp

Almonds: 10-12 sliced

Pistachio: 10-12 sliced

Saffron: 10-12 strands

Method:

1. Mix all the yoghurt, sugar and green cardamon power in a blender.

2. If you would like the lassi a bit thinner, add some water (approx. 1/2 cup).

3. Leave the lassi in the fridge to cool for 1-2 hrs. It can also be kept in the fridge overnight. However, if you keep it for a longer time the extra water added will settle at the bottom. So in that case, I would recommend not to add water and keep the lassi thick.

4. When serving just pour the chilled yoghurt into a glass, top with sliced almonds, pistachios and a few strands of saffron.
